Are cactus leaves high in any particular vitamins or minerals? Are all cactus leaves the same? Aren’t some stringy?
According to my Wikipedia research, nopales are the leaves of prickly pear cactus. They are indeed nutritious: “Nopales are very rich in insoluble and especially soluble dietary fiber. They are also rich in vitamins (especially vitamin A, vitamin C, and vitamin K, but also riboflavin and vitamin B6) and minerals (especially magnesium, potassium, and manganese, but also iron and copper).” They are also known for being good for the digestive tract.
I’d look for them at the grocery store by the Spanish name, nopales.
